I have a confession to make. It's a demon that I've wrestled with for years, and one that I don't see going away any time soon. Ladies and gentlemen...
I'm addicted to sweets.
Instead of trying to fight my issues head on, I'm just going to continue to feed the monster...literally. Sound like a great plan, right? Right.
I'm a big fan of using what's available in my pantry (because I'm resourceful and not at all lazy). What to do with 2 unnecessary bottles of lime juice and some left over shredded coconut? Coconut lime cookies, of course!
To be completely honest, these cookies probably rank in the Top 5 Cookies I've Ever Had. No joke. I based my recipe off of this one I found, but halved the recipe and modified certain things based on taste/ingredient availability. I also added a lime glaze to them. For the love of Pete, DO NOT SKIP THIS STEP!
Coconut Lime Cookies
Ingredients
1 1/3 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup margarine
3/4 cup sugar
1 egg
1/2 teaspoon vanilla extract
Zest of one large lime
3 tbsp lime juice
1/4 cup toasted coconut
1. Preheat oven to 350 degrees.
2. In a small bowl, whisk together flour, baking soda, baking powder and salt.
3. In a separate bowl, beat together the butter and sugar until smooth and very fluffy. A hand mixer comes in very handy for this step if you have one.
4. Beat in the egg, vanilla extract, 1.5 tbsp of the lime juice and three-quarters of the lime zest. Mix until well combined.
5. Gradually add in the dry ingredients and toasted coconut.
(To toast coconut, spread out on a baking sheet and bake at 325 degrees for approx. 5 minutes. Stir every couple of minutes to make sure coconut toasts evenly.)
Mix until combined.
6. Roll cookie dough into balls and place on greased cookie sheet.
7. Bake 12 minutes or until lightly browned.
To make the lime glaze:
1. Wisk1 cup powdered sugar with 1.5 tbsp lime juice and 2 tbsp. water. If too watery, add more powdered sugar. If too paste-y, add more water.
2. Spoon glaze over top of cookie and let sit for 10 minutes.

These should make about 15 fairly large cookies. I tend to make mine a LOT larger than the serving size suggests, but that just means bigger cookies!
A couple things to note:

- In the future, I'm definitely going to add some green gel food coloring to the dough to liven these up. They're not so delicious to look at, and I think that would help their appearance. I'm a BIG fan of gel food coloring...if you don't have any, get some! Not sure if regular food coloring would change the consistency of the dough or not...
- The dough *will be* somewhat sticky. Don't add more flour!
- Keep these far away from family members/roommates/friends/significant others if you don't want them devoured immediately.
